We use whole, fresh pineapples, skins n' all. Chop them down and combine them with dry Demerara sugar, then leave them to work for 3-4 days for the sugar to extract all of the flavour from the fruit. The resulting golden pineapple syrup is then blended with our aged Caribbean rum and lashings of black strap molasses to form this spectacular spirit! 37.5% ABV

50ml Crusty Juggler Pineapple Rum

Few Lime wedges

50ml Pineapple juice

100ml soda

15ml Demerara sugar syrup

Handful fresh mint

Pineapple chunks and fresh pineapple for garnish

Method: Muddle pineapple chunks, lime and fresh mint with sugar syrup in the bottom of a tall glass. Add pineapple juice and crushed ice and stir. Add rum and stir again. Top with soda and garnish with pineapple.
